Wintry Mix

So after receiving a foot of snow from Nemo, tomorrow Mother Nature is delivering a "wintry mix." Wintry mixes are my favorite to see my Weather Channel app. It's like all horrible New England winter weather combined into one. I just laugh when I see it and then I go check San Diego's weather. Sunny and 60 degrees. Of course it is. I am still getting used to the cold weather, snow and wintry mixes. Sometimes it's not so bad, sometimes I want to scream. Someone at work told me if I just embrace the cold, I should be ok. I'll try that next year.

Today was actually nice, I mean despite having to climb our way to the car in 12 inches snow, at least it was sunny! We made our weekly trip to Home Depot, where we spent an hour in the molding aisle deciding if the saw we put on our cart was the correct one. What's new? We purchased all the wood needed to do the beadboard in the dining room, but put the saw back on our way out! I'm not sure what we are going to do with $150 worth of bead board and baseboards and no saw. I guess the plus side is that it can acclimate while we decide what saw to buy? I don't know. Anyways, everything is down in our basement for the time being. As you may remember, we gave ourselves 3 weeks to get this project done. Next weekend marks three, so we better man up and buy a damn saw so we can get started and finished! Fingers crossed Brandon doesn't have to work or else we'll be in trouble. I'm not doing that alone!
Brandon had to run a kid up to Springfield today because she is going to boot camp. It only took about 2 1/2 hours out of his day, so that was nice. I even started dinner for him while he was gone! I have been pinning like crazy lately and I wanted to give these two dishes a try. So tonight we had pesto and cheese stuffed chicken and cauliflower mash. The chicken was delicious! You can get the recipe by clicking here. I followed it exactly (which I normally never do) and it turned out perfect. I didn't even had a meat mallet, so I just pounded it with my fists, which didn't work out too well, but it was still yummy. 

I have been trying to add more vegetables to our meals lately. I saw a recipe a few weeks ago called cauliflower mash. I thought hey, I like mashed potatoes, and that kinda sounds like the same thing, so I can try it. The recipe I used was of the dairy free variety. You can find the recipe here. But after making it the way the recipe called for, it was a little bland for me. So I added about 3 tsp of butter, 1 tsp of milk, some good shakes of salt and garlic salt, and 1/4 cup of shredded Parm to the original recipe. Don't judge me. I wasn't going for healthy..,just going for eating more vegetables. It tasted much better. I liked it a lot, but only when it was warm. When it cooled down, it didn't taste good to me, but Brandon loved it. Not sure if he really enjoyed the taste or just was trying to pump me up. Either way, he ate all of it. 
Well it's back to the grind for us tomorrow. I have to take a lovely standardize test tomorrow for my school psychology license in Massachusetts. I don't understand why every state just can't have the same requirements and the same tests. It doesn't make any sense. But at least I get to check off one more box on my list of requirements in order to get my license! Woot. And this is last week of school until February break! I am so excited because I am going to California to visit my sisters!!! But first, that darn 4 hour test in the morning.
